3 teaspoons dark soy sauce

2 teaspoons oyster sauce

2 teaspoons fish sauce

For The Stir Fry:

3 Thai bird’s eye chilies, finely chopped (adjust to taste)

4 cloves garlic, minced

½ teaspoon salt

3 tablespoons oil (vegetable, canola, or peanut)

½ cup thinly sliced onions

12 shrimp, peeled and deveined (or protein of choice)

3 cups cooked Jasmine rice (day-old preferred)

¼ cup chopped green onions

½ teaspoon freshly cracked black pepper

1 cup packed Thai basil leaves


Instructions

  1. Prepare the Sauce: Whisk together dark soy sauce, oyster sauce, fish sauce, and brown sugar in a small bowl until the sugar dissolves. Set aside.

  2. Prepare Aromatics: Grind the Thai bird’s eye chilies, garlic cloves, and salt using a mortar and pestle (or finely chop).

  3. Stir-Fry Aromatics: Heat oil in a wok or large skillet over high heat. Add the chili-garlic mixture and stir-fry for 30 seconds until fragrant. Be careful not to burn the garlic.

  4. Cook Protein: Add thinly sliced onions and shrimp (or your protein of choice) to the wok. Stir-fry until the shrimp turn pink and the onions become translucent.

  5. Add Rice: Add cooked Jasmine rice to the wok. Break up any clumps and stir-fry for 2-3 minutes, ensuring the rice is thoroughly heated.

  6. Add Sauce: Pour the prepared sauce over the rice. Stir-fry until all the grains are coated and evenly colored.

  7. Finishing Touches: Add chopped green onions, freshly cracked black pepper, and Thai basil. Stir-fry for another minute until the basil wilts slightly.

  8. Serve: Serve hot, garnished with extra Thai basil and chili slices (optional).

Notes

Day-old rice is crucial for the best texture.

Adjust the amount of chili to your spice preference.
