Ingredients

16 oz spaghetti noodles

8 oz cream cheese, softened

3 cups grated mozzarella cheese, divided (2 cups for the sauce, 1 cup for topping)

1 cup grated Parmesan cheese

1.5 cups half and half

2.5 cups shredded cooked chicken (rotisserie or boiled and shredded)

1 tsp dried oregano

1 tsp garlic powder

1 tsp onion powder

1 tsp salt

0.5 tsp pepper

1/4 cup finely chopped fresh parsley, for garnish


Instructions

  1. Preheat your oven to 350°F (175°C). Lightly grease a 9×13 inch baking dish.
  2. Cook the spaghetti according to package directions until al dente. Drain well.
  3. In a large bowl, combine the softened cream cheese, Parmesan cheese, 2 cups of mozzarella cheese, half and half, oregano, garlic powder, onion powder, salt, and pepper. Use an electric mixer or whisk vigorously until smooth and creamy.
  4. Add the drained spaghetti and shredded chicken to the cheese mixture. Toss to coat evenly.
  5. Transfer the spaghetti mixture to the prepared baking dish, spreading evenly.
  6. Top with the remaining 1 cup of mozzarella cheese.
  7. Bake for 20-25 minutes, or until the cheese is melted, bubbly, and lightly golden brown.
  8. Remove from oven and let stand for a few minutes before garnishing with fresh parsley. Serve hot and enjoy!

Notes

Make Ahead: Assemble the casserole ahead of time, cover, and refrigerate for up to 24 hours. Add 10-15 minutes to the baking time.
