Ingredients
1 pound ground chicken
1 1/4 cups breadcrumbs
1/2 cup finely chopped onion
1/2 cup shredded Parmesan cheese
1/4 cup chopped fresh parsley
1 teaspoon kosher salt
1/2 teaspoon garlic powder
1/4 teaspoon ground black pepper
1 cup milk
2 large eggs
2 tablespoons tomato paste
2 tablespoons Worcestershire sauce
Instructions
1. Preheat your oven to 350°F (175°C). Lightly grease a loaf pan or line it with parchment paper.
2. In a large bowl, whisk together the milk, eggs, tomato paste, and Worcestershire sauce until well combined.
3. In a separate bowl, mix breadcrumbs, Parmesan cheese, parsley, salt, garlic powder, and black pepper.
4. Add ground chicken and finely chopped onion to the wet and dry ingredients. Gently mix until just combined. Avoid overmixing.
5. Transfer the mixture to the prepared loaf pan. Press lightly to ensure it’s compact and evenly distributed.
6. In a smaller bowl, combine ketchup, brown sugar, and Worcestershire sauce for the glaze. Whisk until smooth.
7. Pour the glaze evenly over the top of the meatloaf.
8. Bake for approximately 50-60 minutes, or until a meat thermometer inserted into the center reads 165°F (74°C).
9. Remove from oven and let rest for 10 minutes before slicing and serving.
Notes
To prevent the top from getting too dark, cover the loaf with foil during the first half of the baking time. For a spicier kick, add a pinch of red pepper flakes to the meatloaf mixture. Serve with mashed potatoes and roasted vegetables for a complete meal.
