Streusel Crumb Topping:

2/3 cup all-purpose flour

1/3 cup light brown sugar

¼ teaspoon salt

¼ cup unsalted butter, melted

Blueberry Muffins:

1 cup all-purpose flour

¼ teaspoon salt

1 teaspoon baking powder

¼ cup vegetable oil

½ cup granulated sugar

1 large egg

½ teaspoon vanilla

½ cup Greek yogurt

1 ½ cup fresh blueberries (half goes in batter and half for topping)

1 Tablespoon flour, to toss the blueberries

Cream Cheese Filling:

6 oz cream cheese, room temperature

3 Tablespoons granulated sugar

1 teaspoon vanilla

1 teaspoon cornstarch

Glaze (Optional):

¾ cup powdered sugar

1 ½2 ½ teaspoons milk or cream


Instructions

  1. Prepare the Streusel Topping: In a medium bowl, combine flour, brown sugar, and salt. Drizzle with melted butter and mix until crumbly. Set aside.
  2. Make the Cream Cheese Filling: Beat cream cheese, sugar, vanilla, and cornstarch until smooth. Set aside.
  3. Make the Blueberry Muffin Batter: Whisk flour, salt, and baking powder. In a separate bowl, combine oil, sugar, egg, and vanilla. Add dry ingredients to wet, alternating with Greek yogurt. Fold in half the blueberries (tossed in flour).
  4. Assemble the Muffins: Line a muffin tin. Fill each liner halfway with muffin batter, add a dollop of cream cheese filling, and top with remaining batter. Sprinkle with streusel topping and remaining blueberries.
  5. Bake: Bake at 375°F (190°C) for 20-25 minutes, or until a toothpick comes out clean. Let cool in the tin before transferring to a rack.
  6. Glaze (Optional): Whisk powdered sugar and milk until smooth. Drizzle over cooled muffins.

Notes

For best results, use room temperature cream cheese. Don’t overmix the batter for tender muffins. Feel free to substitute other berries or add a touch of lemon zest.
